Ingredients
  

Gummy Base

  • 1 cup fresh orange juice strained
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup granulated sugar
  • 2 tablespoons honey
  • 3/4 cup whole milk
  • 3 envelopes about 21 g unflavored gelatin
  • 1 teaspoon vanilla extract
  • Blue gel food coloring a few drops
  • Neutral oil for greasing the pan

Instructions
 

  • Lightly grease an 8x8-inch pan and line it with parchment paper, leaving overhang on two sides.
  • In a medium saucepan, combine the orange juice, lemon juice, lemon zest, sugar, and honey. Warm over medium heat, stirring until the sugar dissolves. Do not let it boil.
  • Sprinkle the gelatin evenly over the warm liquid and let it bloom for 1–2 minutes.
  • Whisk gently until the gelatin is fully dissolved and the mixture is smooth.
  • Reduce heat to low and slowly whisk in the milk, keeping the mixture warm but never simmering.
  • Remove from heat and stir in the vanilla extract.
  • Add blue food coloring one drop at a time until a pale, opaque blue is reached.
  • Pour the mixture into the prepared pan and gently tap on the counter to release any air bubbles.
  • Refrigerate until fully set, about 2 hours.
  • Lift the slab out using the parchment and cut into small, imperfect cubes with a lightly oiled knife.

Notes

These gummies should be soft and bouncy, not rubbery. For a slightly firmer texture, add 1 teaspoon more gelatin. Serve piled into a small ceramic dish after dinner with coffee or tea. Store chilled in an airtight container for up to 5 days.
