Sweet Potato Chorizo Burrito with Cilantro Sauce

- 1 large sweet potato peeled and diced
- 1/2 lb chorizo sausage
- 1/2 onion diced
- 1 clove garlic minced
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime juiced
Preheat oven to 400°F.
In a large skillet, cook chorizo over medium heat until browned and cooked through. Remove from skillet and set aside.
In the same skillet, add diced sweet potato, onion, garlic, cumin, chili powder, salt, and pepper. Cook until sweet potato is tender, about 10-12 minutes.
Warm tortillas in the oven for 2-3 minutes.
In a small bowl, mix together sour cream, cilantro, and lime juice to make the cilantro sauce.
To assemble the burritos, place a spoonful of sweet potato mixture and chorizo onto each tortilla. Drizzle with cilantro sauce and roll up tightly.
