Sweet Potato Chorizo Burrito with Cilantro Sauce

These sweet potato and chorizo burritos are a delicious and easy meal that can be made in under 30 minutes. The sweet potato and chorizo filling is seasoned with cumin and chili powder, and then wrapped in a warm flour tortilla with a tangy cilantro sauce.

Ingredients
  

  • 1 large sweet potato peeled and diced
  • 1/2 lb chorizo sausage
  • 1/2 onion diced
  • 1 clove garlic minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime juiced

Instructions
 

  • Preheat oven to 400°F.
  • In a large skillet, cook chorizo over medium heat until browned and cooked through. Remove from skillet and set aside.
  • In the same skillet, add diced sweet potato, onion, garlic, cumin, chili powder, salt, and pepper. Cook until sweet potato is tender, about 10-12 minutes.
  • Warm tortillas in the oven for 2-3 minutes.
  • In a small bowl, mix together sour cream, cilantro, and lime juice to make the cilantro sauce.
  • To assemble the burritos, place a spoonful of sweet potato mixture and chorizo onto each tortilla. Drizzle with cilantro sauce and roll up tightly.
  • Serve immediately and enjoy!
