Ingredients
  

  • 8 oz sugar snap peas trimmed
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • Bring a pot of salted water to a boil. Add the sugar snap peas and cook for 1-2 minutes, until bright green and crisp-tender.
  • Drain the peas and rinse under cold water to stop the cooking process. Pat dry with a paper towel.
  • In a large bowl, combine the sugar snap peas, cherry tomatoes, red onion, feta cheese, and mint.
  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss to coat.
