Strawberry Cheesecake Bars

These strawberry cheesecake bars are a delicious and easy dessert that are perfect for any occasion. A graham cracker crust is topped with a creamy cheesecake filling and fresh strawberries, then drizzled with a sweet glaze.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries chopped
  • 1/4 cup powdered sugar

Instructions
 

  • Preheat the oven to 350°F. Line a 9x13 inch baking pan with parchment paper.
  • In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined. Press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat the cream cheese until smooth. Add in the sour cream and 1/2 cup granulated sugar, and beat until well combined.
  • Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Fold in the chopped strawberries.
  • Pour the cheesecake mixture over the graham cracker crust.
  • Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
  • Let the cheesecake bars cool to room temperature, then chill in the refrigerator for at least 2 hours.
  • Once chilled, remove the cheesecake bars from the pan and cut into squares.
  • In a small bowl, mix together the powdered sugar and a splash of water to make a glaze. Drizzle the glaze over the cheesecake bars.
  • Top each bar with fresh strawberries.
  • Serve and enjoy!
