Preheat the oven to 350°F. Line a 9x13 inch baking pan with parchment paper.
In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined. Press the mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese until smooth. Add in the sour cream and 1/2 cup granulated sugar, and beat until well combined.
Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Fold in the chopped strawberries.
Pour the cheesecake mixture over the graham cracker crust.
Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
Let the cheesecake bars cool to room temperature, then chill in the refrigerator for at least 2 hours.
Once chilled, remove the cheesecake bars from the pan and cut into squares.
In a small bowl, mix together the powdered sugar and a splash of water to make a glaze. Drizzle the glaze over the cheesecake bars.
Top each bar with fresh strawberries.
