Spicy Sausage and Broccoli Rabe Pasta

- 1 pound fusilli pasta
- 1 pound spicy Italian sausage casings removed
- 1 bunch broccoli rabe trimmed and chopped
- 4 cloves garlic minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup grated Pecorino Romano cheese
- Salt and pepper to taste
- Olive oil
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8-10 minutes.
Add the garlic and red pepper flakes to the skillet and cook for 1-2 minutes, until fragrant.
Add the broccoli rabe to the skillet and cook, stirring occasionally, until wilted and tender, about 5-7 minutes.
Add the cooked pasta to the skillet and toss to combine with the sausage and broccoli rabe. If the pasta seems dry, add a splash of pasta water to loosen it up.
Season the pasta with salt and pepper to taste.
Serve the pasta hot, topped with grated Pecorino Romano cheese. Enjoy!
