Ingredients
  

  • 2 cups cooked white rice
  • 1 cup diced pineapple
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tsp honey
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
  • Add the diced bell peppers and sauté for another 2-3 minutes until they start to soften.
  • Add the cooked rice to the skillet and stir to combine with the vegetables.
  • In a small bowl, whisk together the soy sauce, sriracha sauce, and honey. Pour the sauce over the rice and stir to coat evenly.
  • Add the diced pineapple to the skillet and stir to combine.
  • Cook for another 2-3 minutes until the pineapple is heated through and the rice is slightly crispy.
  • Season with salt and pepper to taste.
  • Garnish with chopped cilantro and serve hot.
