Ingredients
  

  • 1 can of black beans drained and rinsed
  • 1/2 cup of breadcrumbs
  • 1/4 cup of diced red onion
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of diced green bell pepper
  • 1/4 cup of chopped fresh cilantro
  • 1 egg
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 4 burger buns
  • Optional toppings: avocado, sliced tomato, lettuce, cheese, salsa

Instructions
 

  • Preheat your oven to 375°F.
  • In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly smooth.
  • Add the breadcrumbs, red onion, red and green bell pepper, cilantro, egg, chili powder, cumin, garlic powder, salt, and pepper to the bowl. Mix everything together until well combined.
  • Divide the mixture into four equal portions and shape each portion into a patty.
  • Place the patties on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
  • Toast the burger buns and assemble the burgers with your desired toppings.
