- 1 can of black beans drained and rinsed
- 1/2 cup of breadcrumbs
- 1/4 cup of diced red onion
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced green bell pepper
- 1/4 cup of chopped fresh cilantro
- 1 egg
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 4 burger buns
- Optional toppings: avocado, sliced tomato, lettuce, cheese, salsa
Preheat your oven to 375°F.
In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly smooth.
Add the breadcrumbs, red onion, red and green bell pepper, cilantro, egg, chili powder, cumin, garlic powder, salt, and pepper to the bowl. Mix everything together until well combined.
Divide the mixture into four equal portions and shape each portion into a patty.
Place the patties on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
Toast the burger buns and assemble the burgers with your desired toppings.
