- 1/2 cup diced chorizo
- 1/2 cup grated Manchego cheese
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 1/4 cup olive oil
- Salt and pepper to taste
In a large mixing bowl, whisk together the eggs, salt, and pepper.
