  • 2 large flour tortillas
  • 1 cup shredded cooked chicken
  • 1/2 cup shredded smoked Gouda cheese
  • 1/4 cup chopped chipotle peppers in adobo sauce
  • 1/4 cup caramelized onions
  • 1/2 avocado sliced

Instructions
 

  • In a bowl, mix together the shredded chicken, smoked Gouda cheese, chopped chipotle peppers, and caramelized onions.
  • Heat a large skillet over medium heat.
  • Place one tortilla in the skillet and spread half of the chicken mixture evenly over the tortilla.
  • Top with sliced avocado.
  • Place the second tortilla on top and press down gently.
  • Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
  • Cut into wedges and serve hot.
