Chicken thighs are especially well suited to the slow cooker because they stay juicy and tender. Boneless chicken breasts can be substituted, but begin checking them earlier to avoid overcooking. For a thicker sauce, leave the slow cooker uncovered on HIGH for 10 to 15 minutes after adding the cream and Parmesan, or stir in a slurry made with 1 tablespoon cornstarch and 1 tablespoon cold water. For a toddler-friendly version, omit the red pepper flakes from the slow cooker and add them to individual servings. Serve with mashed potatoes, buttered egg noodles, polenta, rice, or crusty bread for catching every bit of sauce.
