These Cheesy Spinach Lasagna Roll-Ups are a delicious and easy way to enjoy lasagna. Ingredients
  

  • 8 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen chopped spinach thawed and drained
  • 2 cups marinara sauce

Instructions
 

  • Preheat oven to 375°F.
  • Cook lasagna noodles according to package instructions. Drain and set aside.
  • In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, basil, oregano, salt, and black pepper. Mix well.
  • Add spinach to the cheese mixture and stir until well combined.
  • Spread 1/4 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Lay out a cooked lasagna noodle on a flat surface. Spread about 1/4 cup of the cheese and spinach mixture over the noodle. Roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and cheese mixture.
  • Pour the remaining marinara sauce over the lasagna roll-ups.
  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!
