- 8 lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen chopped spinach thawed and drained
- 2 cups marinara sauce
Preheat oven to 375°F.
Cook lasagna noodles according to package instructions. Drain and set aside.
In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, basil, oregano, salt, and black pepper. Mix well.
Add spinach to the cheese mixture and stir until well combined.
Spread 1/4 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
Lay out a cooked lasagna noodle on a flat surface. Spread about 1/4 cup of the cheese and spinach mixture over the noodle. Roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and cheese mixture.
Pour the remaining marinara sauce over the lasagna roll-ups.
Cover the baking dish with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
