Ingredients
  

Peach Cinnamon Rolls

  • 1 refrigerated 8-count package cinnamon rolls with icing
  • 2 1/2 cups diced fresh peaches
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon kosher salt

Cobbler Crumble

  • 1/4 cup all-purpose flour
  • 1/4 cup old-fashioned oats
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch kosher salt
  • 2 tablespoons cold unsalted butter cubed

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 9-inch square baking pan.
  • Combine the diced peaches, lemon juice, granulated sugar, cornstarch, vanilla, and 1/8 teaspoon kosher salt in a small saucepan. Cook over medium heat for 3 to 4 minutes, stirring frequently, until the peaches release some juice and the liquid becomes slightly thickened. Remove from the heat and let cool slightly.
  • Cut each refrigerated cinnamon roll into quarters and arrange the pieces evenly in the prepared baking pan, leaving a little space between them where possible.
  • Spoon the slightly cooled peach filling over and around the cinnamon roll pieces rather than completely burying them.
  • Combine the flour, oats, brown sugar, cinnamon, and pinch of salt. Work in the cold butter with your fingertips until coarse crumbs form.
  • Scatter the crumble evenly over the peaches and cinnamon rolls.
  • Bake for 27 to 32 minutes, or until the exposed cinnamon roll pieces are deeply golden, the peach filling is bubbling, and the dough in the center is cooked through.
  • Let cool for 10 minutes. Drizzle with as much of the included cinnamon roll icing as desired and serve warm.

Notes

Precooking the peach filling briefly removes some excess moisture and helps the cinnamon roll dough bake more evenly. Very ripe, sweet peaches may not need the additional granulated sugar. Frozen peaches can be substituted; thaw and drain them thoroughly before measuring. Do not completely cover the cinnamon roll pieces with peach filling so the dough can brown and bake through. Use the included icing to taste rather than automatically adding the entire container.
