Parmesan-Herb Zucchini Chips

Thin zucchini slices in a crisp Parmesan coat — the kind of snack you eat standing up, pretending to “check on the turkey.”

Ingredients
  

  • 2 medium zucchini thinly sliced
  • 1 large egg
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • Olive oil spray

Instructions
 

  • Preheat air fryer to 375°F (190°C).
  • Dip zucchini slices in egg, then panko-Parmesan-seasoning mix.
  • Arrange in a single layer; spray lightly with oil.
  • Air fry 6–8 minutes until golden.

Notes

Serve with marinara or ranch for dipping.
