  • 2 cans 15 oz each chickpeas, drained and rinsed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 small red onion finely chopped
  • 1/4 cup chopped fresh parsley
  • Zest and juice of one lemon
  • Optional: a pinch of chili flakes

Instructions
 

  • Heat a medium skillet, add olive oil, then garlic, and sauté until fragrant.
  • Add paprika, cumin, salt, and pepper, stir for 30 seconds.
  • Add red wine vinegar, cook for a minute.
  • Remove from heat, add chickpeas, coat well in the spice mix.
  • Transfer to a bowl, add onion, parsley, lemon zest and juice.
  • Add chili flakes if using. Let sit for at least 10 minutes before serving.
  • Serve warm or at room temperature.

Notes

Ideal with grilled meats or in salads. For more robust flavor, marinate overnight.
