15 oz each chickpeas, drained and rinsed

extra virgin olive oil

tablespoons
red wine vinegar

cloves
garlic
minced

teaspoon
smoked paprika
1
teaspoon
ground cumin

fine sea salt
1/4
teaspoon
black pepper
1
small red onion
finely chopped
1/4
cup
chopped fresh parsley
Zest and juice of one lemon
Optional: a pinch of chili flakes
Instructions
Heat a medium skillet, add olive oil, then garlic, and sauté until fragrant.
Add paprika, cumin, salt, and pepper, stir for 30 seconds.
Add red wine vinegar, cook for a minute.
Remove from heat, add chickpeas, coat well in the spice mix.
Transfer to a bowl, add onion, parsley, lemon zest and juice.
Add chili flakes if using. Let sit for at least 10 minutes before serving.
Serve warm or at room temperature.
Notes
Ideal with grilled meats or in salads. For more robust flavor, marinate overnight.
