Maple Cinnamon Oatmeal with Roasted Apples and Pecans

Ingredients
  

  • 1 cup rolled oats
  • 2 cups water
  • 1/2 cup milk
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 apples peeled and chopped
  • 1/2 cup pecans chopped
  • 1 tbsp butter

Instructions
 

  • Preheat the oven to 375°F.
  • In a medium saucepan, combine the oats, water, milk, maple syrup, cinnamon, and salt. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the oatmeal is thick and creamy.
  • While the oatmeal is cooking, spread the chopped apples and pecans on a baking sheet. Melt the butter and drizzle it over the top. Roast in the oven for 10-15 minutes, until the apples are tender and the pecans are toasted.
  • Serve the oatmeal in bowls, topped with the roasted apples and pecans. Drizzle with additional maple syrup, if desired.
