Instant Pot White Bean Cassoulet

Ingredients

  • 1 tablespoon olive oil
  • 8 ounces smoked sausage or kielbasa sliced
  • 1 small yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups dried cannellini or great northern beans rinsed
  • 4 cups low-sodium chicken broth
  • 1 bay leaf

Crispy Topping (Optional)

  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan
  • 1 tablespoon chopped parsley or thyme

Instructions
 

  • Set the Instant Pot to sauté. Add olive oil and sausage, cooking until lightly browned. Remove sausage and set aside.
  • Add onion to the pot and sauté until soft, about 3–4 minutes. Add garlic and cook 30 seconds more.
  • Stir in tomato paste, smoked paprika, thyme, salt, and pepper. Cook until the paste darkens slightly.
  • Add beans, broth, bay leaf, and browned sausage. Stir to combine.
  • Lock the lid and cook on high pressure for 35 minutes. Natural release for 15 minutes, then quick release remaining pressure.
  • Discard bay leaf. Taste and adjust seasoning.
  • Mix breadcrumbs, olive oil, and Parmesan. Toast in a skillet until golden.
  • Serve cassoulet hot, topped with crispy breadcrumbs and herbs.

Notes

Gets better as it sits. Use canned beans for a faster version (pressure cook 10 minutes). Skip topping for toddlers or mash slightly.
