Instant Pot Thai Mango Sticky Rice

This recipe is for a delicious and easy-to-make dessert called Mango Sticky Rice. It consists of glutinous rice cooked in coconut milk and sugar, and served with fresh sliced mango on top.

Ingredients
  

  • 1 cup glutinous rice
  • 1 can coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 ripe mangoes peeled and sliced

Instructions
 

  • Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
  • Drain the rice and place it in the instant pot with 1 1/2 cups of water. Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
  • In a separate pot, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring constantly, until the sugar has dissolved.
  • Once the instant pot has finished cooking, release the pressure manually. Open the lid and pour the coconut milk mixture over the cooked rice in the instant pot. Stir to combine.
  • Close the lid again and set the valve to sealing. Cook on high pressure for 5 minutes.
  • Once the instant pot has finished cooking, release the pressure manually. Open the lid and let the rice sit for 10-15 minutes to absorb the coconut milk.
  • Serve the sticky rice with sliced mango on top. Enjoy!
