Rinse the rice under cold water until the water runs clear. Drain well.
Add the rinsed rice, milk, sugar, vanilla extract, ground cinnamon, and salt to the Instant Pot. Stir well to combine.
Close the Instant Pot lid and set the valve to the sealing position.
Select the ""Manual"" or ""Pressure Cook"" setting and set the timer for 10 minutes on high pressure.
Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Then, carefully release any remaining pressure by moving the valve to the venting position.
Open the Instant Pot lid and give the rice pudding a good stir. It might seem liquidy at first, but it will thicken as it cools.
If desired, add raisins or nuts to the rice pudding and stir well.
Serve the rice pudding warm or chilled. You can also sprinkle some cinnamon sugar on top for added flavor.
