Instant Pot Rice Pudding

Ingredients
  

  • 1 cup white rice
  • 4 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional toppings: raisins nuts, or cinnamon sugar

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Drain well.
  • Add the rinsed rice, milk, sugar, vanilla extract, ground cinnamon, and salt to the Instant Pot. Stir well to combine.
  • Close the Instant Pot lid and set the valve to the sealing position.
  • Select the ""Manual"" or ""Pressure Cook"" setting and set the timer for 10 minutes on high pressure.
  • Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Then, carefully release any remaining pressure by moving the valve to the venting position.
  • Open the Instant Pot lid and give the rice pudding a good stir. It might seem liquidy at first, but it will thicken as it cools.
  • If desired, add raisins or nuts to the rice pudding and stir well.
  • Serve the rice pudding warm or chilled. You can also sprinkle some cinnamon sugar on top for added flavor.
