  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 can 15 ounces white hominy, drained and rinsed
  • 4 cups chicken broth
  • 1 can 14.5 ounces diced tomatoes, undrained
  • Salt and pepper to taste
  • For serving:
  • Fresh cilantro chopped
  • Sliced radishes
  • Chopped avocado
  • Lime wedges
  • Tortilla chips

  • Set your Instant Pot to the sauté function and heat the olive oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until they become fragrant and slightly softened.
  • Add the chicken pieces to the Instant Pot and cook for about 5 minutes until they are browned on all sides.
  • Sprinkle the cumin, chili powder, and dried oregano over the chicken mixture. Stir well to coat the chicken evenly with the spices.
  • Pour in the chicken broth and add the drained hominy and diced tomatoes with their juice. Give everything a good stir.
  • Secure the lid on the Instant Pot and make sure the pressure release valve is set to the sealing position. Cook on high pressure for 15 minutes.
  • Once the cooking time is complete, allow for a natural pressure release for about 10 minutes. Then, carefully perform a quick pressure release to release any remaining pressure.
  • Open the Instant Pot and give the pozole a good stir. Taste and season with salt and pepper according to your preference.
  • Serve the chicken pozole hot, garnished with fresh cilantro, sliced radishes, chopped avocado, and a squeeze of lime juice. Serve with tortilla chips on the side for some added crunch.
