Instant Pot Chicken Pozole

- 1.5 pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 can 15 ounces white hominy, drained and rinsed
- 4 cups chicken broth
- 1 can 14.5 ounces diced tomatoes, undrained
- Salt and pepper to taste

- Instructions:
Set your Instant Pot to the sauté function and heat the olive oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until they become fragrant and slightly softened.
Add the chicken pieces to the Instant Pot and cook for about 5 minutes until they are browned on all sides.
Sprinkle the cumin, chili powder, and dried oregano over the chicken mixture. Stir well to coat the chicken evenly with the spices.
Pour in the chicken broth and add the drained hominy and diced tomatoes with their juice. Give everything a good stir.
Secure the lid on the Instant Pot and make sure the pressure release valve is set to the sealing position. Cook on high pressure for 15 minutes.
Once the cooking time is complete, allow for a natural pressure release for about 10 minutes. Then, carefully perform a quick pressure release to release any remaining pressure.
Open the Instant Pot and give the pozole a good stir. Taste and season with salt and pepper according to your preference.
Serve the chicken pozole hot, garnished with fresh cilantro, sliced radishes, chopped avocado, and a squeeze of lime juice. Serve with tortilla chips on the side for some added crunch.
