Ingredients
  

Lime Whipped Feta

  • 6 ounces feta cheese
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon finely grated lime zest

Corn Fritters

  • 2 1/2 cups fresh or thawed frozen corn kernels patted very dry
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup finely sliced scallions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons neutral oil plus more as needed

For Serving

  • 3 tablespoons hot honey
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 lime cut into wedges

Instructions
 

  • Blend the feta, Greek yogurt, olive oil, lime juice, and lime zest until creamy and mostly smooth. Spread onto a serving platter and refrigerate while preparing the fritters.
  • Pat the corn very dry. In a large bowl, whisk together the eggs, flour, baking powder, scallions, garlic powder, smoked paprika, salt, and black pepper. Fold in the corn until evenly coated and the mixture holds together when scooped.
  • Heat 1 tablespoon neutral oil in a large nonstick skillet over medium heat until shimmering.
  • Scoop approximately 1/4 cup of the corn mixture per fritter into the skillet and gently flatten to about 1/2-inch thick. Avoid overcrowding the pan.
  • Cook for 2 to 3 minutes per side, until deeply golden, crisp at the edges, and cooked through. Repeat with the remaining mixture, adding additional oil as needed.
  • Arrange the hot fritters over the chilled whipped feta. Drizzle with hot honey, scatter with fresh herbs, and serve immediately with lime wedges.

Notes

Dry corn is essential for crisp fritters, especially when using frozen corn. If the first fritter spreads excessively, stir 1 additional tablespoon flour into the remaining batter. For appetizer-size fritters, use about 1 tablespoon batter each and reduce the cooking time. Regular honey warmed with red pepper flakes can replace hot honey. For a mild version, leave the hot honey off individual portions and serve it at the table.
