Preheat oven to 350°F.
In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
Add the chilled butter to the bowl and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the honey, milk, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until a dough forms.
Divide the dough in half and roll each half out on a floured surface to about 1/8 inch thickness.
Use a cookie cutter or knife to cut the dough into desired shapes.
Place the crackers on a baking sheet lined with parchment paper and prick each cracker with a fork a few times.
Bake for 12-15 minutes, or until the edges are golden brown.
