Homemade Chalupa Supremes

These sweet potato and chorizo burritos are a delicious and easy meal that can be made in under 30 minutes. The sweet potato and chorizo filling is seasoned with cumin and chili powder, and then wrapped in a warm flour tortilla with a tangy cilantro sauce.

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can refried beans
  • 1 cup shredded cheddar cheese
  • 8 chalupa shells
  • 1 cup shredded lettuce
  • 1 diced tomato
  • 1/4 cup diced onion
  • 1/4 cup sour cream

Instructions
 

  • Preheat oven to 375°F.
  • Brown ground beef in a skillet over medium heat. Drain excess fat.
  • Add taco seasoning and 1/2 cup water to the skillet. Stir until well combined.
  • Add refried beans to the skillet and stir until heated through.
  • Place chalupa shells on a baking sheet.
  • Spoon beef and bean mixture into each chalupa shell.
  • Sprinkle shredded cheese on top of each chalupa.
  • Bake in the oven for 10-12 minutes, or until cheese is melted and bubbly.
  • Remove from oven and top each chalupa with shredded lettuce, diced tomato, diced onion, and a dollop of sour cream.
  • Serve and enjoy your delicious chalupa supreme!
