Homemade Breakfast Sausage

This recipe is for making homemade breakfast sausage using ground pork and a blend of spices. It is a delicious and healthier alternative to store-bought sausage.

Ingredients
  

  • 1 pound 450g ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried red pepper flakes optional
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon olive oil for cooking

Instructions
 

  • In a mixing bowl, combine the ground pork, salt, black pepper, sage, thyme, rosemary, red pepper flakes (if using), garlic powder, onion powder, and nutmeg. Mix well using your hands or a spoon until all the spices are evenly distributed throughout the meat.
  • Once the mixture is well combined, take a small amount and shape it into a small patty. Cook the patty in a skillet over medium heat for 2-3 minutes on each side, until it's cooked through. Taste and adjust the seasoning if needed.
  • If you're satisfied with the seasoning, shape the rest of the mixture into small patties or roll it into sausage links, depending on your preference. You can use a sausage stuffer or simply shape them by hand.
  • Heat olive oil in a skillet over medium heat. Add the sausage patties or links to the skillet, being careful not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until the sausages are browned and cooked through.
  • Once cooked, transfer the sausages to a paper towel-lined plate to remove any excess grease.

Notes

Note: You can also make a larger batch of these sausages and freeze them for later use. Just place the uncooked sausages on a baking sheet lined with parchment paper, and freeze them until firm. Then, transfer them to a freezer-safe bag or container and store for up to 3 months. Thaw them in the refrigerator before cooking.
