Ingredients
  

  • 1 pound of carrots peeled and cut into 1-inch pieces
  • 2 tablespoons of harissa paste
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1/2 cup of plain Greek yogurt
  • 1 tablespoon of lemon juice
  • 1 garlic clove minced
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 400°F.
  • In a bowl, mix the harissa paste, olive oil, salt, and pepper.
  • Add the carrots to the bowl and toss until they are coated with the harissa mixture.
  • Spread the carrots in a single layer on a baking sheet and roast for 20-25 minutes, or until they are tender and slightly charred.
  • While the carrots are roasting, prepare the yogurt sauce. In a small bowl, mix the Greek yogurt, lemon juice, garlic, and salt to taste.
  • Once the carrots are done, transfer them to a serving dish and drizzle the yogurt sauce over them.
  • Garnish with fresh parsley and serve hot.
