Grilled Peach and Burrata Salad

Ingredients
  

  • 4 ripe peaches halved and pitted
  • 8 oz burrata cheese
  • 4 cups arugula
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat.
  • In a small saucepan, combine balsamic vinegar and honey. Bring to a boil, then reduce heat and simmer for 5-7 minutes until the mixture thickens. Set aside.
  • Brush peach halves with olive oil and season with salt and pepper.
  • Grill peaches for 2-3 minutes on each side until grill marks appear and the peaches are slightly softened.
  • Arrange arugula on a large platter or individual plates.
  • Top with grilled peaches and burrata cheese.
  • Drizzle balsamic glaze over the salad.
  • Serve immediately and enjoy!
