- 4 ripe peaches halved and pitted
- 8 oz burrata cheese
- 4 cups arugula
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1/4 cup olive oil
- Salt and pepper to taste
Preheat grill to medium-high heat.
In a small saucepan, combine balsamic vinegar and honey. Bring to a boil, then reduce heat and simmer for 5-7 minutes until the mixture thickens. Set aside.
Brush peach halves with olive oil and season with salt and pepper.
Grill peaches for 2-3 minutes on each side until grill marks appear and the peaches are slightly softened.
Arrange arugula on a large platter or individual plates.
Top with grilled peaches and burrata cheese.
Drizzle balsamic glaze over the salad.
