Ingredients
  

  • 1 block of halloumi cheese sliced into 1/4 inch thick pieces
  • 4 cups of cubed watermelon
  • 1/4 cup of fresh mint leaves chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the vinaigrette. Set aside.
  • Place the halloumi cheese slices on the grill and cook for 2-3 minutes on each side, until grill marks appear and the cheese is slightly softened.
  • In a large bowl, combine the grilled halloumi, cubed watermelon, and chopped mint leaves.
  • Drizzle the lemon vinaigrette over the salad and toss gently to combine.
  • Serve immediately and enjoy!
