  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 pound frozen meatballs
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 cup sliced mushrooms
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Cooked egg noodles or rice for serving

Instructions
 

  • Warm olive oil in a skillet over medium heat. Add onion and sauté until translucent, then add garlic and cook until fragrant.
  • Add frozen meatballs and smoked paprika. Stir to coat and let brown slightly, about 5 minutes.
  • Mix in Worcestershire sauce and beef broth. Bring to a simmer and let meatballs stew for 10-15 minutes.
  • Reduce heat to low, stir in sour cream and mushrooms. Simmer until sauce thickens and mushrooms are tender, about 5 minutes. Season with salt and pepper.
  • Serve meatball mixture over egg noodles or rice. Garnish with fresh parsley.

Notes

For a richer stroganoff, use half sour cream and half Greek yogurt or heavy cream. Swap smoked paprika with cayenne for spice, or add Dijon mustard for tang.
