Ingredients
  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 quart chicken or vegetable broth
  • 1 14.5 oz can diced tomatoes, preferably fire-roasted
  • 1 15 oz can cannellini beans, drained and rinsed

For Serving

  • 1 baguette sliced and lightly toasted
  • 1 cup grated Gruyère cheese
  • 1 lime cut into wedges
  • Salt and pepper to taste
  • Fresh cilantro chopped, for garnish

Instructions
 

  • Heat the olive oil in a soup pot; sauté onion until soft, add garlic, thyme, and paprika; cook until fragrant.
  • Add broth and tomatoes; bring to a simmer.
  • Add cannellini beans; simmer for 15 minutes.
  • Broil sliced baguettes with Gruyère until golden.
  • Season soup; serve with cheesy baguette, lime, and cilantro.

Notes

For vegetarian version, use vegetable broth. Adjust smoked paprika to taste. Soup stores up to 3 days refrigerated.
