Feta and Roasted Red Pepper Dip

This recipe is for a creamy and flavorful roasted red pepper and feta dip that is perfect for dipping pita chips or crudité. The dip is made with roasted red peppers, crumbled feta cheese, Greek yogurt, garlic, lemon juice, black pepper, olive oil, and fresh parsley.

Ingredients
  

  • 8 oz feta cheese crumbled
  • 1/2 cup 1/2 cup roasted red peppers chopped
  • 1/4 cup 1/4 cup plain Greek yogurt
  • 2 cloves 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F. Place the red peppers on a baking sheet and roast for 20-25 minutes, until the skin is charred and the peppers are tender. Remove from the oven and let cool.
  • In a food processor, combine the feta cheese, roasted red peppers, Greek yogurt, garlic, lemon juice, and black pepper. Pulse until smooth.
  • With the food processor running, slowly drizzle in the olive oil until the dip is creamy and well combined.
  • Transfer the dip to a serving bowl and sprinkle with fresh parsley.
  • Serve with pita chips or crudité for dipping. Enjoy!
