  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 cup frozen hash browns
  • 1 cup cooked breakfast sausage or diced ham
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: chopped spinach roasted red peppers, or scallions

Instructions
 

  • Preheat oven to 375°F and grease an 8x10 baking dish.
  • Warm olive oil in a skillet and sauté diced onion until softened.
  • Scatter frozen hash browns into the prepared baking dish.
  • Add cooked onions, sausage or ham, and half of the shredded cheese.
  • Whisk eggs, milk, Dijon mustard, salt, and pepper together in a mixing bowl.
  • Pour the egg mixture evenly over the casserole base.
  • Top with the remaining cheese.
  • Bake for 35–40 minutes until the center is set and the edges are golden.
  • Let rest for 5–10 minutes before slicing and serving.

Notes

Swap proteins freely — bacon, chorizo, or leftover roasted vegetables all work. Use pre-diced frozen onions to skip sautéing entirely. For toddlers, cut into strips once cooled. Excellent cooled, sliced, and served with hot honey for apéro-style snacking.
