  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups broccoli florets bite-sized
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
  • 1/2 cup breadcrumbs
  • 2 tbsp butter melted

Instructions
 

  • Preheat the oven to 375°F. Use an oven-safe skillet or lightly greased baking dish.
  • Sauté onion in hot oil until golden, then add garlic and cook until fragrant.
  • Stir in rice to toast slightly, then add broccoli and mix.
  • Add broth, salt, and pepper; cover and simmer until rice is almost tender, about 17 minutes.
  • Stir in cheddar and half the parmesan until melted.
  • Combine breadcrumbs, remaining parmesan, and butter; sprinkle over the top and bake until golden and bubbling.

Notes

Swap in brown rice and extend cook time. Use veggie broth for a meatless main.
