  • 400 grams spaghetti
  • 100 grams unsalted butter
  • 2 cloves garlic finely sliced
  • 1 teaspoon crushed red pepper flakes
  • 200 grams burrata torn into chunks
  • Zest of 1 lemon
  • 1/4 cup chopped fresh basil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Grated Parmesan cheese for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water, then drain.
  • Melt butter in a skillet over medium heat until it foams and turns golden brown. Add garlic and red pepper flakes, cook until golden.
  • Toss spaghetti with brown butter in the skillet. Start with half of the reserved pasta water, adding more to achieve a silky texture.
  • Plate the spaghetti. Dot with burrata, sprinkle lemon zest and basil on top. Season with salt and pepper. Finish with Parmesan.
  • Serve immediately, ensuring each plate has butter-coated spaghetti and chunks of burrata.

Notes

Watch butter carefully to avoid burning. Add burrata when pasta is still hot to gently warm the cheese. Use reserved pasta water to create a sauce that clings to the spaghetti.
