Broccoli Cheddar Soup
This recipe is for a creamy and comforting Broccoli Cheddar Soup that is perfect for a chilly day. It is made with fresh broccoli florets, diced onions, chicken or vegetable broth, heavy cream, grated cheddar cheese, and seasonings. The soup is blended until smooth and garnished with shredded cheddar cheese and crispy bacon bits.
- 4 cups broccoli florets
- 2 tbsp butter
- 1/2 cup diced onions
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups grated cheddar cheese
- Salt and pepper to taste
- Pinch of nutmeg
- Shredded cheddar cheese and crispy bacon bits for garnish
Steam or blanch the broccoli florets until tender. Set aside.
In a saucepan, melt the butter over medium heat. Add the diced onions and sauté until translucent.
Add the cooked broccoli to the saucepan, along with the chicken or vegetable broth and heavy cream. Stir well to combine.
Stir in the grated cheddar cheese until melted and smooth. Season with salt, pepper, and a pinch of nutmeg.
Using an immersion blender or regular blender, blend the soup until creamy.
