Breakfast Tacos

This recipe is for delicious breakfast tacos made with flour tortillas, scrambled eggs, breakfast sausage, diced onion and bell pepper, and shredded cheddar cheese. The tacos are easy to make and can be customized with your favorite toppings. They are perfect for a quick and satisfying breakfast or brunch.

Ingredients
  

  • 6 small flour tortillas
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Salsa and sour cream for serving

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper and cook until softened, about 5 minutes.
  • Add the cooked breakfast sausage to the skillet and stir to combine with the vegetables.
  • Crack the eggs into the skillet and scramble them with the sausage and vegetables until cooked through.
  • Warm the flour tortillas in the microwave or on a griddle.
  • To assemble the breakfast tacos, place a spoonful of the egg and sausage mixture onto each tortilla. Top with shredded cheddar cheese and a dollop of salsa and sour cream.
  • Fold the tortillas in half and serve immediately.
