Ingredients
  

  • 1 pound shishito peppers
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup apricot preserves
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes

Instructions
 

  • Preheat the oven to 400°F.
  • Rinse the shishito peppers and pat them dry with a paper towel.
  • Toss the peppers with olive oil, salt, and pepper in a bowl.
  • Spread the peppers in a single layer on a baking sheet and roast for 10-12 minutes, or until the peppers are blistered and tender.
  • While the peppers are roasting, make the apricot dipping sauce. In a small saucepan, combine the apricot preserves, soy sauce, rice vinegar, and red pepper flakes. Cook over medium heat, stirring occasionally, until the mixture is smooth and heated through.
  • Serve the blistered shishito peppers hot with the apricot dipping sauce on the side.
