This recipe is a delicious and healthy salad made with roasted beets, mixed greens, goat cheese, and walnuts, all tossed in a homemade dressing.

Ingredients
  

  • 4 medium-sized beets roasted and sliced
  • 4 cups mixed greens
  • 4 oz goat cheese crumbled
  • 1/2 cup walnuts chopped
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F. Wash and trim the beets, then wrap them in foil and roast for 45-60 minutes, or until tender. Let cool, then peel and slice into rounds.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
  • In a large bowl, toss the mixed greens with the dressing until evenly coated.
  • Arrange the sliced beets on top of the greens, then sprinkle with crumbled goat cheese and chopped walnuts.
  • Serve immediately and enjoy!
