Beet and Goat Cheese Salad

- 4 medium-sized beets roasted and sliced
- 4 cups mixed greens
- 4 oz goat cheese crumbled
- 1/2 cup walnuts chopped
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Preheat the oven to 400°F. Wash and trim the beets, then wrap them in foil and roast for 45-60 minutes, or until tender. Let cool, then peel and slice into rounds.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.
In a large bowl, toss the mixed greens with the dressing until evenly coated.
Arrange the sliced beets on top of the greens, then sprinkle with crumbled goat cheese and chopped walnuts.
