- 2 tablespoons butter
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup beer preferably a light ale
- 2 cups shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional toppings: croutons chopped bacon, chopped green onions
In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
Sprinkle the flour over the onion and garlic mixture and stir to combine. Cook for 1-2 minutes, stirring constantly.
Slowly pour in the chicken broth and beer, stirring constantly to prevent lumps from forming.
Bring the mixture to a simmer and cook for 10-15 minutes, until slightly thickened.
Add the shredded cheddar cheese and stir until melted and smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Serve hot with optional toppings, if desired.
