Banana Oat Mini Muffins

  • 1 cup mashed very ripe banana about 2 large bananas
  • 2 large eggs
  • 1/3 cup pure maple syrup
  • 1/3 cup tahini well stirred
  • 1/4 cup neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt

Tahini Drizzle

  • 2 tablespoons tahini well stirred
  • 1 tablespoon pure maple syrup
  • 1 to 2 tablespoons warm water
  • Pinch of kosher salt

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 24-cup mini muffin pan.
  • In a large bowl, whisk together the mashed banana, eggs, maple syrup, tahini, neutral oil, and vanilla until well combined.
  • In a separate bowl, whisk together the flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  • Add the dry ingredients to the banana mixture and fold just until combined. Let the batter stand for 5 minutes to allow the oats to begin absorbing moisture.
  • Divide the batter among the prepared mini muffin cups, filling each about three-quarters full.
  • Bake for 10 to 13 minutes, until the tops spring back lightly and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool in the pan for 5 minutes, then transfer the mini muffins to a wire rack.
  • Whisk together 2 tablespoons tahini, 1 tablespoon maple syrup, 1 tablespoon warm water, and a pinch of salt. Add additional warm water 1 teaspoon at a time as needed until smooth and drizzle-able.
  • Drizzle the tahini mixture over the cooled or slightly warm mini muffins before serving.

Notes

Use very ripe bananas for the best sweetness and banana flavor. Stir the tahini thoroughly before measuring. The 5-minute batter rest allows the rolled oats to hydrate and improves the finished texture. Tahini may initially thicken or seize when water is added to the drizzle; continue whisking and gradually add warm water until smooth. For freezing, freeze the muffins without the drizzle and add it after thawing.
