Baked Brie with Cranberry Chutney

This recipe is for a delicious baked brie with cranberry chutney. The brie is topped with a mixture of cranberries, brown sugar, apple cider vinegar, red onion, dried apricots, walnuts, cinnamon, ginger, and cloves, and then baked until the cheese is melted and bubbly. It is served with crackers or sliced baguette for dipping into the warm, gooey cheese and cranberry chutney.

Ingredients
  

  • 1 wheel of brie cheese
  • 1 cup fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/4 cup chopped red onion
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • Crackers or sliced baguette for serving

Instructions
 

  • Preheat the oven to 350°F.
  • In a medium saucepan, combine the cranberries, brown sugar, apple cider vinegar, water, red onion, dried apricots, walnuts, cinnamon, ginger, and cloves. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the cranberries have burst and the mixture has thickened.
  • Remove the rind from the top of the brie cheese and place it in a small baking dish.
  • Spoon the cranberry chutney over the top of the brie cheese.
  • Bake for 10-15 minutes, until the cheese is melted and bubbly.
  • Serve the baked brie with crackers or sliced baguette for dipping into the warm, gooey cheese and cranberry chutney.
