Bacon and Ranch Potato Salad

This recipe is for a delicious bacon and ranch potato salad that is perfect for a summer BBQ or picnic. The baby potatoes are boiled until tender and then mixed with crispy bacon, chopped green onions, and a creamy ranch dressing and sour cream mixture. The salad is chilled in the refrigerator before serving.

Ingredients
  

  • 1 pound baby potatoes
  • 6 slices of bacon
  • 1/4 cup ranch dressing
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions
 

  • Wash and boil the baby potatoes until they are tender. Drain and let them cool.
  • Cook the bacon in a pan until crispy. Remove from the pan and let it cool. Once cooled, chop the bacon into small pieces.
  • In a small bowl, mix together the ranch dressing and sour cream.
  • Cut the cooled potatoes into bite-sized pieces and place them in a large bowl.
  • Add the chopped bacon and chopped green onions to the bowl with the potatoes.
  • Pour the ranch dressing and sour cream mixture over the potatoes and bacon. Mix well.
  • Add salt and pepper to taste.
  • Chill the potato salad in the refrigerator for at least 30 minutes before serving.
