Ingredients
  

  • 2 ripe avocados
  • 4 hard-boiled eggs chopped
  • 1/2 cup diced celery
  • 2 tablespoons chopped chives
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Dash of paprika
  • Large lettuce leaves
  • Toothpicks

Instructions
 

  • In a medium bowl, mash the avocados with a fork.
  • Add the chopped hard-boiled eggs, diced celery, chopped chives, and lemon juice to the bowl. Mix well.
  • Season the avocado egg salad with salt, pepper, and a dash of paprika. Mix again.
  • Take a large lettuce leaf and spoon some of the avocado egg salad onto it.
  • Roll up the lettuce leaf, tucking in the sides as you go.
  • Secure the lettuce wrap with a toothpick.
  • Repeat with the remaining lettuce leaves and avocado egg salad.
  • Serve the avocado egg salad lettuce wraps immediately. Enjoy!
