Ingredients

  • 1 pound 450g ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried red pepper flakes optional
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon olive oil for cooking

Instructions

  • In a mixing bowl, combine the ground pork, salt, black pepper, sage, thyme, rosemary, red pepper flakes (if using), garlic powder, onion powder, and nutmeg. Mix well using your hands or a spoon until all the spices are evenly distributed throughout the meat.
  • Once the mixture is well combined, take a small amount and shape it into a small patty. Cook the patty in a skillet over medium heat for 2-3 minutes on each side, until it’s cooked through. Taste and adjust the seasoning if needed.
  • If you’re satisfied with the seasoning, shape the rest of the mixture into small patties or roll it into sausage links, depending on your preference. You can use a sausage stuffer or simply shape them by hand.
  • Heat olive oil in a skillet over medium heat. Add the sausage patties or links to the skillet, being careful not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until the sausages are browned and cooked through.
  • Once cooked, transfer the sausages to a paper towel-lined plate to remove any excess grease.

Notes

Note: You can also make a larger batch of these sausages and freeze them for later use. Just place the uncooked sausages on a baking sheet lined with parchment paper, and freeze them until firm. Then, transfer them to a freezer-safe bag or container and store for up to 3 months. Thaw them in the refrigerator before cooking.

These sausages are the perfect addition to your breakfast spread, whether you’re enjoying a leisurely weekend brunch or need a quick and satisfying meal to kickstart your day.

Now, let’s dive into the ingredients that will make these sausages truly exceptional. First up, we have a pound of ground pork, which serves as the base for our flavorful creation. To elevate the taste, we’ll be adding a teaspoon of salt, half a teaspoon of ground black pepper, and a medley of dried herbs including sage, thyme, and rosemary. These aromatic herbs will infuse the sausages with a delightful earthiness that will awaken your taste buds.

For those who enjoy a little kick, we have the option to include a quarter teaspoon of dried red pepper flakes. This addition will add a subtle heat that complements the other flavors beautifully. To round out the seasoning, we’ll be incorporating a quarter teaspoon each of garlic powder and onion powder, along with a hint of ground nutmeg. These ingredients work together harmoniously, creating a symphony of flavors that will make your breakfast truly memorable.

Now that we have our ingredients ready, it’s time to bring them all together. In a mixing bowl, combine the ground pork with all the spices. Mix everything thoroughly, ensuring that the spices are evenly distributed throughout the meat. You can use your hands or a spoon for this step, whichever you prefer. Once the mixture is well combined, take a small amount and shape it into a patty. This will allow you to taste and adjust the seasoning if needed. Trust me, this little taste test is worth it!

Once you’re satisfied with the seasoning, it’s time to shape the rest of the mixture into small patties or roll them into sausage links, depending on your preference. You can use a sausage stuffer if you have one, or simply shape them by hand. Now, it’s time to cook these beauties. Heat some olive oil in a skillet over medium heat and add the sausages. Be careful not to overcrowd the pan, as we want them to brown evenly. Cook for about 4-5 minutes on each side, or until the sausages are beautifully browned and cooked through.
