Beer Cheese Soup
Ingredients
- 2 tablespoons butter
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup beer preferably a light ale
- 2 cups shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional toppings: croutons chopped bacon, chopped green onions
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
- Sprinkle the flour over the onion and garlic mixture and stir to combine. Cook for 1-2 minutes, stirring constantly.
- Slowly pour in the chicken broth and beer, stirring constantly to prevent lumps from forming.
- Bring the mixture to a simmer and cook for 10-15 minutes, until slightly thickened.
- Add the shredded cheddar cheese and stir until melted and smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot with optional toppings, if desired.
