Simple Cheesy Spinach Lasagna Rollups
Ingredients
- 8 lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen chopped spinach thawed and drained
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, basil, oregano, salt, and black pepper. Mix well.
- Add spinach to the cheese mixture and stir until well combined.
- Spread 1/4 cup of marinara sauce on the bottom of a 9×13 inch baking dish.
- Lay out a cooked lasagna noodle on a flat surface. Spread about 1/4 cup of the cheese and spinach mixture over the noodle. Roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and cheese mixture.
- Pour the remaining marinara sauce over the lasagna roll-ups.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
