Ingredients

Instructions

  • In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.
  • Sprinkle the flour over the onion and garlic mixture and stir to combine. Cook for 1-2 minutes, stirring constantly.
  • Slowly pour in the chicken broth and beer, stirring constantly to prevent lumps from forming.
  • Bring the mixture to a simmer and cook for 10-15 minutes, until slightly thickened.
  • Add the shredded cheddar cheese and stir until melted and smooth.
  • Stir in the heavy cream and season with salt and pepper to taste.
