Instructions
- Set your Instant Pot to the sauté function and heat the olive oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until they become fragrant and slightly softened.
- Add the chicken pieces to the Instant Pot and cook for about 5 minutes until they are browned on all sides.
- Sprinkle the cumin, chili powder, and dried oregano over the chicken mixture. Stir well to coat the chicken evenly with the spices.
- Pour in the chicken broth and add the drained hominy and diced tomatoes with their juice. Give everything a good stir.
- Secure the lid on the Instant Pot and make sure the pressure release valve is set to the sealing position. Cook on high pressure for 15 minutes.
- Once the cooking time is complete, allow for a natural pressure release for about 10 minutes. Then, carefully perform a quick pressure release to release any remaining pressure.
- Open the Instant Pot and give the pozole a good stir. Taste and season with salt and pepper according to your preference.
- Serve the chicken pozole hot, garnished with fresh cilantro, sliced radishes, chopped avocado, and a squeeze of lime juice. Serve with tortilla chips on the side for some added crunch.
This traditional Mexican soup is perfect for a cozy night in or a festive gathering with friends and family.
First, let’s talk about the star of the dish – the chicken. I love using chicken thighs for this recipe because they are tender and flavorful. The Instant Pot makes cooking the chicken a breeze, and it comes out perfectly cooked every time.
Next, we have the hominy. This ingredient is what gives Pozole its signature texture and flavor. I recommend using canned hominy for convenience, but you can also use dried hominy if you prefer.
The broth is made with a combination of chicken broth, diced tomatoes, and a blend of spices. I like to use a combination of chili powder, cumin, and oregano for a warm and comforting flavor.
To finish off the dish, we have a variety of toppings to choose from. I like to serve my Pozole with sliced avocado, chopped cilantro, and a squeeze of lime juice. Other popular toppings include shredded cabbage, diced onion, and crumbled queso fresco.
Overall, this Instant Pot Chicken Pozole is a delicious and easy recipe that is sure to impress. It’s perfect for a cozy night in or a festive gathering with friends and family. So, grab your Instant Pot and let’s get cooking!
