This is a sweet and creamy dessert that’s perfect for any occasion. I’m talking about coconut sticky rice with mango!

First things first, let’s talk about the star of the show – glutinous rice. This type of rice is perfect for desserts because it’s sticky and has a chewy texture. Rinse the rice in cold water until the water runs clear and soak it for at least 30 minutes. This will help the rice cook evenly and absorb the coconut milk later on.

Next, we’ll be using an instant pot to cook the rice. This is a game-changer because it saves time and ensures that the rice is cooked perfectly. Once the rice is cooked, we’ll add a mixture of coconut milk, sugar, and salt to the pot. This will give the rice a sweet and creamy flavor that’s irresistible.

After cooking the rice and coconut milk mixture together for a few minutes, we’ll let the rice sit for 10-15 minutes to absorb all the flavors. This step is crucial because it allows the rice to become sticky and delicious.

Finally, we’ll top the coconut sticky rice with sliced mango. The sweetness of the mango complements the creamy coconut rice perfectly. It’s a match made in heaven!

This dessert is perfect for any occasion, whether it’s a family gathering or a dinner party. It’s easy to make and will impress your guests. So, what are you waiting for? Give this recipe a try and let me know what you think!
